Yummy and tender!
Just ordered and prepared these tender little ribs...I've seen them called riblets. The quality of the meat shows in the great taste. Absolutely delicious!

Excellent Lamb ribs
I've purchased lamb 'ribs' from other providers via the internet and none have been as good as these from US Wellness meats. You get what you see and the flavor is amazing.  I smoked mine from their raw state using indirect heat.  They were on for approximately 4-5 hours with charcoal and pecan wood that had been soaked before adding to the coals turning them when needed.  I won't order my lamb ribs from any other source. Thank you US Wellness for the quality or your product. BEWARE of other providers that advertise their ribs as ribs.  I have received "riblets"or whole unprepared rib breasts which are extremely fatty.  In fact they were mostly fat.

Outstanding!
I love lamb but this is the first time I've ever had lamb riblets. We smoked them with a black cherry juice and fig barbecue sauce…They came out absolutely outstanding! I have already added more into my shopping cart.

Amazingly flavorful!
These lamb ribs are outstanding! The delicate lamb flavor makes it difficult to stop eating. Even the fat (a nice amount... especially if you're doing the LCHF or Keto thing) has a sweet delicate flavor. We absolutely love these ribs!

I cook them the same way I cook pork ribs: peel the underside membrane off, then little sprinkle of sea salt and let brine for 3-8 hours in the fridge. Then, dust them with a little Dolly Rib Rub (http://amazingribs.com/recipes/rubs_pastes_marinades_and_brines/lamb_paste.html) and throw them in the mighty Memphis Grill pellet smoker for several hours at 225. You want to cook them until the surface cracks a bit when you lift the end of the rack with tongs.

Delicious and Tender!
These ribs were so delicious and tender. I seasoned with salt, pepper and curry and cooked in crock pot for 6 hours. Then poured bbq sauce over them and baked in oven on 375 for an hour. My family couldn't get enough of them.

Where is the meat?
After slow cooking these lamb ribs, covered, in the oven on 275 for 3 hours followed by 20 min, uncovered, at 375, these were done and tender.  The problem was very little meat: 15  oz. was fat; 1 lb, 7 oz was meat (I took pictures on a scale).  Of the meat nearly 1/2 was too fat streaked to be edible to us. obviously the ribs must have weighed more than 2 lbs initially. I would never purchase this item again. I will stick with racks of lamb and lamb chops.
